Rocky road cheesecake pudding

‘We wish you a merry Christmas, we wish you a merry Christmas, we wish you a merry Christmas and a Happy New Year.
Now bring us some figgy pudding, now bring us some figgy pudding, now bring us some figgy pudding and a cup of good cheer.’

This is my third and final recipe that I will be sharing this festive season. We've had sweet and spices but today, we're going to put that all together to make the most moreish and potentially diabetes inducing pudding to ever exist.

Today's dessert: Rocky Road Cheesecake Pudding

Everyone has heard of rocky road and everyone has heard of cheesecake but it's not quite as common to hear them together. If you type in ‘Christmas Desserts’ on a search engine like Google, it definitely won't be the first result to come up. Oh. My. GOD. It's so good though. It's one of the more complicated recipes out of the three but it's so worth it. Here's how to make it.

You will need:
For the pudding:
  • 2x 200g ready-made marble cakes
  • 225ml double cream
  • 150g dark chocolate
  • 2tbsp golden syrup

For the cheesecake filling:
  • 2x 280g full fat cream cheese
  • 200ml double cream
  • 75g icing sugar
  • 2tsp vanilla extract

For the rocky road:
  • 150g dark chocolate
  • 75g butter
  • 1tbsp golden syrup
  • 75g digestive biscuits
  • 25g pretzel pieces
  • 50g mini marshmallows

For the decoration:
  • Edible glitter
  • Chocolate truffles
  • Hundreds-and-thousands sprinkles
  • 50g white chocolate
  • Zest of ½ orange
 
  1. Line a big bowl with clingfilm with some excess to cover the top. Cut the cakes lengthways into 8/9 pieces and use them to line the bowl, leaving no gaps.
  2. Mix the ingredients for the cheesecake filling by putting all the ingredients together and whisking until thick and smooth.
  3. Fill the lined bowl with the filling, leaving enough room for the rocky road.
  4. Break the chocolate for the rocky road into pieces, add the golden syrup and butter the heat over simmering water until melted.
  5. Tip the biscuits in the food bag and crush them with a rolling pin. Add the pretzel pieces and marshmallows and add to the chocolate mixture.
  6. Mix until combined and everything is covered in chocolate and then spoon it over the cheesecake. Cover with clingfilm and an upside-down plate and chill for up to three days.
  7. Heat the cream, chocolate and golden syrup in a pan until melted and smooth - don't let it boil or you'll have to start again.
  8. Unwrap the cake and turn it out on to a wire rack.
  9. Pour the chocolate glaze over the cake to cover it completely and chill for ten minutes.
  10. Melt the white chocolate in the microwave and drizzle it over the cake before decorating with truffles, sprinkles, orange zest and glitter as you wish.
